Freezing

You can freeze cooked steak and veggies for up to 2 months. Thaw overnight in the fridge and reheat in a skillet for best texture.

What cut of beef is best for steak fajitas?

Flank steak and skirt steak are the classics. Flank is a bit thicker and widely available. Skirt has deeper beefy flavor but can cook even faster. You can also use sirloin flap or flat iron if you see them.

How do I keep the steak tender?

Three things: do not overcook (pull around 125 to 130°F for medium-rare, knowing it can rise a few degrees as it rests), rest it for 5 to 10 minutes, and slice against the grain very thin.

Can I marinate overnight?

Yes, but keep it to 8 to 12 hours. Citrus and vinegar are great, but too long can make the exterior a little mushy.

For the steak and marinade

1 1/2 lb flank steak or skirt steak
3 tbsp neutral oil (avocado, canola, or grapeseed), plus more for the pan
2 limes, juiced (about 1/4 cup)
2 tbsp orange juice (optional but excellent for balance)
2 tbsp low-sodium soy sauce (or tamari)
2 tbsp Worcestershire sauce
3 cloves garlic, finely grated or minced
2 tsp chili powder
1 1/2 tsp ground cumin
1 tsp smoked paprika
1 tsp kosher salt
1/2 tsp black pepper
Pinch of cayenne (optional)

For the veggies

1 large yellow onion, sliced into 1/2-inch strips
3 bell peppers (mix colors), sliced into 1/2-inch strips
1/2 tsp kosher salt
1 tbsp oil, as needed

For serving

8 small flour tortillas or corn tortillas, warmed
Cilantro leaves
Lime wedges
Sour cream or crema
Salsa or pico de gallo
Optional: sliced jalapeños, avocado, shredded cheese

Instructions

Marinate the steak. In a bowl or zip-top bag, whisk together oil, lime juice, orange juice (if using), soy sauce, Worcestershire, garlic, chili powder, cumin, paprika, salt, pepper, and cayenne. Add the steak and coat well. Marinate at room temperature for 30 minutes, or refrigerate for up to 8 to 12 hours. If refrigerated, let the steak sit out for 20 minutes before cooking for more even results.
Reserve clean marinade for the pan sauce. Before adding the steak, pour 1/3 cup of the marinade into a small bowl and set aside. This keeps it clean and avoids cross-contamination with raw meat.
Get your skillet hot. Place a large cast iron skillet over medium-high heat until very hot. Add a small drizzle of oil.
Char the peppers and onions. Add onion and peppers in an even layer. Sprinkle with 1/2 tsp salt. Cook, stirring only occasionally, until blistered and tender-crisp, about 6 to 8 minutes. If your pan looks crowded, cook the veggies in two batches so they char instead of steaming. Transfer to a plate.
Sear the steak. Increase heat to high. Add another drizzle of oil if the pan looks dry. Remove steak from marinade and let excess drip off. Sear steak until deeply browned, about 3 to 5 minutes per side depending on thickness. If using skirt steak, start checking at 2 to 3 minutes per side. Aim for 125 to 130°F for medium-rare, or 135°F for medium.
Rest, then slice. Transfer steak to a cutting board and tent loosely with foil. Rest for 5 to 10 minutes. Slice thinly against the grain (look for the muscle lines and cut across them).
Make the sauce, then coat. Reduce heat to medium-high. Pour in the reserved clean marinade and bring it to a full boil, scraping up browned bits. Cook until it is bubbling throughout and slightly reduced, about 2 to 3 minutes. Turn off the heat. Add steak slices and any juices from the cutting board, plus the peppers and onions. Toss for 10 to 20 seconds, just until glossy and warmed. Do not simmer the sliced steak unless you like your medium-rare getting opinions.
Serve. Pile everything into warm tortillas and finish with cilantro, lime, and your favorite toppings. Serve immediately while it is still audibly excited.
